Louisiana Creole Gumbo

Louisiana Creole Gumbo Gumbo, Cajun, and jambalaya are all creole. This is also the origin of the names for each flavor: Creole Gumbop and Cajun Jambalaya. Creole means "from the heart," so these dishes may be based on experiences from life in Houston or Baton Rouge. Cajun means "ousseless" or "simple" and this may describe the recipes that are simplicity itself.
