Did you ever hear of sorghum or how it is made? It involves a process of pressing sorghum cane to extract the juice, then cooking it down in flat pans to evaporate the juice into a rich brown syrup. This sorghum syrup was at one time essential to American and Oklahoma kitchens. The making of sorghum syrup will be a part of the festivities as the Smithsonian Institution — working with the Oklahoma Humanities Council — begins the first of a six-community tour called “Key Ingredients: America by Food.”
This fascinating exhibit affords a great opportunity to look at our history by way of food. The Oklahoma Humanities Council has been working with the Smithsonian for more than two years to bring this exhibit to Oklahoma, beginning in Wewoka at the Seminole Nation Museum from Oct. 22 through Dec. 3.
